I’ve been really feeling lemon lately – adding it to my water, quinoa and even vegetables.
There’s something about the contrast of taste between lemon and greens that I just crave – I drool over it every time. So being me, I naturally researched some greens that pair well with citrus and WAL-LAH! Lemon roasted asparagus.
It’s not only healthy, it takes barely any time to prepare. Win! Between work, the gym, blogging, etc., I love when I can simplify my life.

Another great thing about this recipe is that you can tailor it to any vegetable you want. Lemon roasted broccoli is one of my favs.
Lemon Roasted Asparagus
A delicious citrus side dish made with clean ingredients and takes no time to prepare!
- ½ pound fresh asparagus
- ½ teaspoon salt
- ½ teaspoon fresh ground black pepper
- olive oil spray
Preheat oven to 425 degrees. Line a rimmed baking sheet with parchment paper and set aside.
Rinse the asparagus and trim off woody end pieces. Spread out in a thin layer on top of the prepared cookie sheet.
Spray the asparagus lightly with a coat of olive oil spray. Sprinkle with salt and pepper. Use your hands to mix the asparagus with all of the ingredients, then lay out into an even layer again. Spray with one more light coat of olive oil.
Bake in the preheated oven for 8 minutes. Remove from oven and serve immediately. Enjoy!
