I’m someone that gives all desserts a fair chance, but I typically prefer the ones that are full of sugar, dairy, and many other delicious things. This month, however, I’ve been on a whole30 only […okay 90%] kick and have been making a conscious effort to avoid the things that don’t fuel my body. It’s January, don’t judge me and I know the rest of America is with me at least until February 1st comes around. Anyways, as I was searching for Whole30 recipes, I came across these amazingly healthy Coconut Cashew Bars by The Bewitchin’ Kitchen and had to share. They’re full of whole, real ingredients, and are so satisfying. Here’s how to whip them up!
Coconut Cashew Bars
Dates, coconut, and cashews blended together to create a healthy, Whole30 dessert.
- 2 Cups Pitted Dates
- 3/4 Cup Shredded Coconut Unsweetened
- 2/3 Cup Unsalted Cashews
Add all ingredients listed above into a high-quality blender. I use the Ninja NJ600.
Process on low for 3-4 minutes
Line a 9×9 pan with parchment paper and press the mixture in, let set for an hour or two.
Cut into 9 squares and store in the refrigerator for up to 1 week.
